Super Healthy Caramel Apple Dip

Tis this season for apple picking! It is one of my favorite things to do with the kiddos this time of year. As we are headed home, my mind is thinking of all the things we want to do with our fresh supply of apples. Here is one that adults and kids both love- caramel dip. This is a super easy and healthy version! You just need a few hours for the dates and cashews to soak.
1 cup medjool dates, pitted (about 8 to 10 dates)

1 teaspoon fresh lemon juice

1 teaspoon vanilla extract

1/4 teaspoon fine sea salt

1/4 cup almond milk

1 tablespoon coconut oil

optional: a few cashews or cashew butter

If you are using a standard blender or food processor, we recommend soaking the dates for 2 to 3 hours, until soft. If you have a more powerful blender, like the Vitamix, there is no need to soak…it will blend the dates easily!

Combine all the ingredients and blend until smooth and creamy, adding extra almond milk if necessary. Chill before serving.
